Almost end of veggie month!


We tried very hard to go veggie for the month of October, it wasnt too hard - we didn't really notice it. But we did feel an urge towards the end of the month on a Friday night for a chicken korma and chips!

Courgette ribbons

Courgette ribbons (used potato Peeler) low heat fried in olive oil. Add couple spoons of pesto or even better make your own pesto I was lazy. Mix over low heat. Perfect side dish!

Mish mash

Continuing on with our veggie month tonight we have Mexican bean burgers (tesco frozen). Really nice spice and tasty, better than meat substitute cardboard stuff. We had that with fries & garlic mushrooms. And used our toms and basil from the allotment with mozzarella etc, green salad cucumber dressing bit of parmesan over. Mini fest left over salad for lunch tomorrow and crumble still going strong from yesterday

Oven dried tomatoes

The first of the tomatoes preseved. This time did oven dry, also minced up in little blender a mix of lemon thyme, thyme, garlic , black pepper, salt and olive oil, and painted on to top of halved tomatoes, Put in oven over several sessions over weekend, only on very low, finally taking out, draining and reserving juices and oils, turning the toms over (so now skins upwards) and giving a final session. The toms came our substantual, chewy and caramelised yum! Hopefully will keep in jar for a few months.

I got a new juicer from Argos to juice done Apple's. The color is lovely but has to filter out the bits of apple through some muslin


Cider

Stocking up on cider from the Tudor arms slimbridge. A container costs 1.50 and then cost of cider. We filled it up with dancing dog following an extensive taste trial


Smoked kippers

From the Liverpool food and drink festival and kippers by post. Prob the best I have ever had and you get four basically.froze the other two didn't eat for tea
